  • José Gourmet

We preserve memory and tradition JOSÉ is a name whose origin is lost in the memory of time. Many JOSÉs, similar companies, have gone through the most remote history of humanity. Many JOSÉs became well-known in the recent past. We pay homage to all the JOSÉs that remain in our collective imaginary, as well as to those that were relevant in the anonymity of our lives. It seemed befitting to evoke such a meaningful and typically Portuguese name, and at the same time, one that is so universal. JOSÉ appeared to be the smart choice for the project we started years ago. From the Hebrew root, JOSÉ is “the one who adds on”. This was our goal: to add material and immaterial value, to expand relations between quality production and consumption quality, to increase understanding of the quality of raw materials, their nutritional potential, and the quality of the great small producers and products. We preserve values and relationships We are not producers. We are between those who produce with quality, and those who appreciate products that meet the requirements. Between the first and the latter, we carry out our adventure: to introduce, to add value, to promote new social and commercial relations, and new social and dietary habits among people. We do not compete with competitors, whoever they are. We maintain an honest relationship with our suppliers and clients. Anyone who produces with commitment and responsibility, selecting good ingredients and implementing processes of excellence, deserves equal yield. We reach out to clients – or they come to us – demanding and sensitive to fair trade; people who won’t settle for anything less than the best and are willing to buy our products at fair price.

  • Santa Catarina

Heir of an old cannery tradition of the São Jorge Island, Atún Santa Catarina’s factory brings to your table the best tuna prepared according to artisanal methods used by the old cannery masters. Sustainability The global trend towards the exploitation of tuna by large commercial fleets is countered in the Azores by a commitment to quality over quantity. The tuna fish is caught on the Azorean sea, using the Pole and Line method (1 man, 1 fishing rod, 1 fishhook, 1 tuna fish) without any sort of predatory activity, being the only fishing method to be considered Dolphin Safe and environmentally sustainable. It is then manually laboured in Santa Catarina’s factory. The classification “Dolphin Safe” and “Friend of the Sea” As ecological recognition and appreciation, tuna fishing in the Azores, known as “Pole & Line” is certified since 1998 by the nongovernmental organization Earth Island Institute as “Dolphin Safe”, due to its lesser predatory characteristics, and since 2001 as “Friend of the sea”, the first tuna fishing method in the world to be awarded such certification. “Pole & Line” fishing, a sustainable method. As it is an artisanal method, the “Pole & Line” fishing requires all the experience of São Jorge Island’s fishermen. They begin by detecting the presence of tuna through binoculars. Then, they make their approach, turn off the engines and turn on the showers that simulate the escape of small fish, from which the tuna feeds, which hides the fishermen from their field of vision. After, they throw the bait overboard to attract the school and start the fishing activities. It is an example that allows fishermen to catch only enough fish without endangering other species or smaller fish. Unlike what happens in trawling practiced by large commercial fleets, the centenary arts of “Pole & Line”, practiced by the tuna boats of the region, are considered environmentally friendly, because they allow the fisherman to choose the fish and thus preventing unnecessary catches. ABOUT WILDFISH CANNERY We smoke and can wild Alaska seafood, carrying on the craft and time-honored traditions of the region in the small seaside town of Klawock, home to Alaska’s very first salmon cannery more than a century ago. Klawock, located on Prince of Wales Island in Southeast Alaska, has a population of just 796, most of whom consider fishing an essential part of life. Wildfish was founded in 1987 and is now run by chef and grandson of the founder Mathew Scaletta, who is dedicated to melding his fine dining background, honed in foodie paradise Portland, Oregon, with his family’s craft. We feel grateful for our community of local fishermen, employees and patrons. Our success is their success; the story of our island town, our sense of place and hospitality is something time will never change. We invite you into our world with every tin of smoked Alaska seafood. MASTERS OF OUR CRAFT Nature provides perfection — we’re here to preserve it. We wouldn’t be doing this if we weren’t committed to offering the highest quality sustainable seafood, including bycatch species, prepared to a standard fit for the chef’s table but available to anyone who cares about the food they eat. Three generations in and we’re still here taking the best of our traditions and bringing a new school touch. The exploration and excellence never stops. We do things the right way. The right way happens to be the slow way and the hard way. But that’s what it takes, and that’s why we do it. Hand-harvested seafood becomes our hand-packed products and nothing this good ever happens without some good ol’ blood, sweat and tears — although, to be clear, these are not actual ingredients. Wildfish proudly uses only wild caught, sustainable Alaska seafood. We hit the docks and buy our seafood straight from the fishermen and divers who harvest it, our friends and neighbors. Buying at peak harvest, we hand slice every piece, nice and thick, then brine it in mouthwatering seasonings and smoke it with indigenous alder wood. Then we hand-pack each 6 oz. can and cook it to perfection so you can enjoy our favorite flavors at any time.
