But there are moments when I question that thinking. This is a product so clearly superior that tasting it for the first time I was reminded of my first Grand Cru chablis. It was a product so completely different from other wines called chablis that my entire understanding of what was possible, and what I could expect, was forever altered. 

This is such a product. Magnificent.

The differences between tuna in a tin and tuna in a jar are varied, neither is necessarily inherently better than the other because of how many factors are involved in going from fish to plate: how the fish is caught, how it’s frozen, how it’s thawed, how it’s cut, how it’s packed, and how it’s preserved, to name just a few. The temperature at which the preserving happens is lower with glass, and the form factor of the jar allows for different cut piece geometries. We found the tuna in this jar to be excellent, very large pieces that flaked apart easily. The texture was reminiscent of that finger of chicken breast meat referred to as the “tender”. Good color, excellent flavor, a really excellent jar of white tuna. #conservas
