Tarantelo (also spelled tarantello) is a fantastic cut from the belly of the tuna, it is the cut right next to ventresca, with ventresca being larger and closer to the head of the fish, tarantelo is smaller and closer to the tail. It has a high percentage of fat that perfectly complements the mellowness of its meat. It comes from fish caught in the summer season in the Bay of Biscay.
