    Wow! What a gorgeous tin of trout this is. This came in the tin as one beautiful piece of fish, luminescent skin that seems to hold sort of loosely on to the meat of the fish, which was nice for taking the piece apart bite by bite. Everything from the flavor, to the feel of the fish was very delicate, the lemon and pepper don’t overpower the fish, but do offer a nice flavor as the fish itself is quite mild. I could see this being a good beginner-friendly can for someone who finds the bolder flavors or pilchards to be intimidating. The preserved lemon in particular stands out, as each little piece gives a nice mild lemon-y punch as you come across them. I normally add things like hot sauce to my sardines, but I think this trout is best enjoyed exactly as it is out of the can. I would maybe serve it with a very mild cracker, but nothing more.

    This is a delightful tin for anyone who prefers a mild fish. I’m a little congested and didn’t really notice the lemon and pepper flavors, but there were nice little slices of lemon and a few peppercorns in the tin. Two pieces of trout, skin-side up, sat invitingly in very flavorful olive oil.

    I drained the oil into a bowl, added the juice of half a lemon and a little quince syrup, and cracked some black pepper to make a dressing. I put the trout on a bed of arugula and mizuna with red onions and avocado. It was a very satisfying salad, and my only complaint is that I wish I had more trout. It was flaky, mild, and succulent. I ended up opening a can of spiced Nuris to finish the job when the trout disappeared too soon. Talk about a 180 in flavor and texture!

    If you’ve read this far and you’re into healthy salad proteins, buy this.

    GREAT tin. There’s no better flavor/value combo than this trout, and I’ve had many of the competitors. Lemon hits hard, the skin is on and beautiful, perfectly flaky, not tons of smoke. Best to eat on its own so you don’t lose the delicate flavors. As disappointed as I was in the Cole’s salmon, I was just as ** thrilled ** with this Cole’s lemon trout. Absolutely worth the extra few $ especially if you plan on eating it by itself.

    Interested in trying trout? Buy this without hesitation! This is the perfect balance of quality fish, citrus, and smoke. Exactly what I want from trout! This made a fantastic salad finisher, and didn’t leave my coworkers hating me after assembling my dish in our break room. I haven’t had a single item from Cole’s that I didn’t enjoy, but this one lingers on my mind to this day.
