As you can tell from the title, this category is a little contrived. I said “whole” in order to exclude the Güeyu Mar tails and loins in order to keep this set affordable, because I’m after a showing of the range rather than a strictly “complete” set. I included peppercorns, because the King Oscar Cracked Pepper does have some zip, and everyone is curious about the Sichuan peppercorn (which is pretty subtle, but still tasty and I think part of the entire experience of pepper-added fish). I’ve stretched the definition of “whole” to include boneless & skinless because the Minerva (and King Oscar) are damned tasty and have a fair amount of zip. And I include the admittedly sweet pepper piquillo Matiz product because this is about the love of sardines and peppers–and the Piment d’Espelette isn’t really very hot, and neither is the Padron pepper, so we’re not strictly anything other than an incomplete exploration of the intersection of the “pepper” and the “sardine”.
