This was a fun tasting. Bottom line, both producers offer a high quality sardine, but Pollastrini had a slight edge in taste. Whether age makes a difference is something I’m still not sure about. I don’t know how much of the difference is due to variations in catch and how much is due to more time in the can, as both the vintage sardines were unique enough that I couldn’t attribute the nuances to age. Still, it’s a fun tasting!
