Ventresca means belly. There are four kinds of tuna being tinned: skipjack, yellowfin, albacore, and bluefin and each has its own distinct characteristics. Many people prefer the meaty flavor of yellowfin to the chalkiness of albacore. We enjoy both at different times, but recommend you try them all to find your own favorite.
