Ferrigno La Bonne Mer Sardines in Butter with Thyme de Provence

These are intended to be lightly fried in the butter they’re packed in and then served atop steamed potatoes and/or vegetables. Thyme de Provence, also known as Summer Thyme is spicier than common thyme, and the preferred option in authentic French cuisine.

Butter is a solid at room temperature, and the easiest way to make the butter liquid enough to remove the contents of the tin is to drop them into a pan of simmering water as you remove the pan from the heat. Let sit until just cool enough to handle easily.  Some people remove with tongs then run the tin under cool water so that it can be handled sooner. Be careful when breaking the seal as the contents are now under some slight pressure. We place our tins on a folded up paper towel for traction and to deal with any splurt. Pour contents into a saute pan and fry on medium heat until the edges just begin to get golden.

    This tin came with three plump sardines jam packed in there. They were a bit scaly but nothing terrible. Sautéed these in a pan and ate with bread. They had a really nice thyme flavor and are a great alternative to the persillade deens if you want to change flavor profiles but want something nice and buttery!

    Were these delicious? Yes, absolutely. Will you feel good about eating them? Probably not. Obviously, these are not healthful. Packed in a surprising amount of butter, these sardines have an incredible aroma of thyme, even before cooking. I dumped out the contents of the tin into the pan and fried them in the butter for a few minutes before eating. First, I can’t say much about what the sardines looked like, as they were covered in butter upon extraction (I’m lazy and did not preheat the tin first to liquify the butter). As the thyme fries, it smells amazing. There were 3 large sardines and they were still beautifully moist and tender after cooking. They still maintain some of their pre-cooked texture, which is a great experience with the lightly-crisped exterior post-fry. I spread some of leftover butter on toast (there will be a lot butter left) and toasted the bread in a separate pan. Predictably, it’s fantastic. If you aren’t health-conscious and want an indulgence, this is your tin.

    Followed the included instructions to heat the butter in the tin before frying the deenz for a bit in a skillet. I ate them on top of some green beans cooked with dijon mustard. I have to say, as this came to me as part of a surprise box, this was a fun little surprise! Very different from any other deen product I’ve tried so far, and I enjoyed the whole frying process. The deens themselves were quite tasty, with the butter and thyme coming through (the thyme smell was very strong!), though they were a little dry, however I think I might have fried them for too long. Not an everyday tin, but a really fun change of pace!

    This tin is delicious but very rich. Not an every day tin but something I’d eat every once in a while. I rate this tin 7.8/10. Really good thyme flavor and lots of buttery sauce. As suggested, I warmed it in a pot of water before opening and this worked great. Sauteed the sardines in their sauce and put them on a crusty focaccia with capers and lemon.

    This was a first for me. I have never eaten a sauted tinned sardine. I warmed the butter and browned the fish and developed a nice brown color on each side. Did not smell up the house at all. The taste of the fish was amazing.

    I opened the tinned and simply plopped them in a pan on medium-low heat until the butter was bubbling a bit and the sardines were warmed through. These were plump, juicy, not fishy-tasting, and herbaceous. I really enjoyed them!!

    I opened the tin completely before placing it in a half inch of boiling water–there is a lip around the top of the can that helps prevent the water from getting into the can. With oil-packed sardines I can easily eat a whole tin in one sitting. With this tin, the richness of the butter brought me to satiation much more quickly, even spread out over fresh white rice. There were three large and plump sardines swimming in the warmed butter and they were very tender. Delicious if you really like thyme–if you don’t like thyme or are neutral towards it, this might be too much.
