Ferrigno Les Belles de Marseille Sardines au Pastis

$7.00

Sardines with a hint of anise flavor provided by a splash of pastis, the classic apéritif of Marseille. Fun fact, pastis is one of those liquors that turns opaque when diluted with water. Don’t know pastis or anise? Imagine a whisper of licorice or bulb fennel.

Expectations were so high, but this fell a little short for me. It was fine but unfortunately, the pastis / anise flavor really wasn’t detectable by either my nose or tongue. Maybe that’s an issue with my palate or maybe it’s super faint, but I was so very eager to have that anise flavor come through and it …. didn’t. Probably didn’t help that this is a Ferrigno artwork tin, a product line that I absolutely adore and have come to expect so much out of. But where Ferrigno artwork tins *really* shine are the strong flavors and additional ingredients sitting under the fish. With this ‘au Pastis’ tin, there are no additional ingredients but I can’t help but wish they’d put some fennel slices in there to accentuate the anise flavor they hinted at. Fish quality was typical Ferrigno, nothing spectacular but solid. Oil quality was fine but again, not memorable. If I was to eat this tin again, I’d add some flaky salt and a squeeze of lemon.

Worth trying, especially if you love Ferrigno in general. Just calibrate your tongue to really try to focus in on a really faint anise flavor and maybe you’ll find it. Or do the fennel slice thing from the start and hope it ramps up the flavor intensity.

This was a decent, if forgettable tin. The “hint” of anise mentioned in the description is really a whisper. It’s a “close your eyes and engage all possible senses to detect” level of hint. I tried really hard to find that splash of pastis. What I usually like about the Ferrigno artwork tins are the little extra flavors and ingredients mixed in. Not so with this tin, unfortunately. However, on the plus side, the sardines were good! The skin was a bit beaten up and there were a couple hints of scales. These were not-quite-Matiz-sized large sardines. They were pretty firm but retained a good bit of moisture. Excellent sardine flavor. Once I got over the anise-flavor hangup, I enjoyed the tin. Probably not a re-buy, though.

So, this is my first-time swimming in the Ferrigno pool, and I decided to go with the pastis sardines. I dig the graphics and there’s a cool little legend printed on the back. Also, a line explaining that these deens are baked “to make them lighter and easier to digest.” The scent was your standard sardine scent with five fish, lightly packed and easy to remove. The texture was very moist, and the spines had a very crunchy mouth feel but still easy enough to chew. The spines are easy enough to remove if you want. These are the prettiest looking fish as there were spots of missing skin, but they were delicious and that is what matters most. My only complaint is that the Pastis was so faint that I almost missed it. Overall, these were a nice tin of fish, and I am looking forward to trying more from Ferrigno.
