Exploring vintage sardines, what a fun way to spice up your lunch. Is an aged sardine any better or different than a regular sardine? Your answer may vary but for me, I can’t say I noticed a big flavor difference here despite trying. Note that I haven’t had a “regular” Ferrigno sardine tin -only the awesome artwork flavored ones- so perhaps there is a nuance there in that comparison that I didn’t pick up on. Ultimately it didn’t matter much as this was still a perfectly enjoyable regular sardine. A touch on the firmer/drier side but not actually dry, a little undersalted to my taste. The fish held together very well and had a mild flavor that was (fine by itself but) nicely elevated with a little Espinaler sauce and also with some Tabasco. If you’re looking for a standard sardine flavor profile but with a little bit of “let’s try out this vintage” fun, this is a rock solid choice.

I wanted to try a vintage tin to see what it was all about and was not disappointed. I can’t say how this vintage would compare to any of the others from Ferrigno, because I haven’t tried them, let alone side-by-side. I will say that I expected sardines this old to be somewhat soft in texture, but this was absolutely not the case. These fish were nice and firm with excellent flavor.
