Pretty nice tin with a little extra moisture than a traditional Ferrigno sardine – a great reminder of Ferrigno quality after I’d not had them in a while. Flaky, moist, shimmery with above average oil flavor as well. I wished for just a touch more salt but honestly this was about as delicious as I’d hoped it would be. While I didn’t necessarily note any big differences when I ate the 2017 Ferrigno tin, it felt like these 2018 were a little more unique … perhaps there’s something to this aging thing after all! If you love a simple, pure French sardine then you owe it to yourself to try this tin. (And for extra fun, maybe even try them side-by-side with the Fleur de Sel version.)

Aged sardines are a thing, who knew? If you’re considering trying some vintage tins you definitely should. This was a delicious offering and I felt the fish and oil had really come together with some age. The fish was rich and moist and the oil had a delightful fishiness. Enjoy these with some crusty bread and soak up all the goodness.
