Tasting Notes: La Brújula sardines are fished in the plankton rich water of the coast of Galicia between June and October, and are processed immediately. They are hand packed into tins filled with olive oil and have a firm texture and a mild flavor.

    Intensely savory, smooth textured sardines. Nearly what you could call ~unctuous~ in the way that they meld with the olive oil. These feel nice, really nice, but I almost couldn’t eat the whole tin, they were so rich. Dear reader, I persevered, bravo to me, and for my efforts I was well sated.

    These were some of the better small deens I’ve had! Really nice texture, perfect amount of salt, and not too fishy. Ate these with some rice and pickled veg on some seaweed squares and they were a perfect dinner portion for myself. I would definitely put these on the same level as Ramon Pena and would be hard pressed to pick a favorite between the two. Would absolutely recommend these to beginners or experienced deeners!

    This was a real banger of a gourmet sardinella tin! Popping the lid I was presented with a faint aroma of the ocean, nothing overtly fishy. The sardines were beautifully packed with no signs of the pearly skin banged up at all. These had the perfect texture – just firm enough to come out of the tin without braking apart but tender enough to melt in your mouth. The fish were so flaky and delicate, ate half of them straight of the tin! The olive oil was nice and creamy and I drizzled some of it on my usual sourdough toast. The seasoning was spot on also, perhaps even a bit light on the salt which is really something coming from me (I normally complain about tins being too salty). I can see this being a nice tin to try if you’re trying to watch your sodium levels – 278mg for the serving I had.
    All in all this was a fantastic tin, only thing holding it back is the price as some other premium small sardine brands can be had for slightly less. I would still get this one periodically to mix it in with Ramon Peña, Paco Lafunte and Conservas de Cambados whenever I want a high-end sardine experience.

    Clean, meaty little darlings. These were almost golden in the right light, firm yet tender to bite, not overly fishy smelling and I hardly noticed the spines. These rank up there with the Ramon Peña and Espinaler small sardines, maybe not as pretty as those but they are wonderful! a must try straight from the tin.
