Skipjack is the smallest and most abundant of the tunas, with the quickest breeding period, making them the most sustainable. The fish are small, quick to mature, and lower on the food chain so they are not subject to the same sustainability and mercury concerns as the other species. The flesh leans towards the browner hues in color, and is firm, juicy and pleasantly fibrous.
