Yellowfin doesn’t get the respect it deserves. Bonito del Norte gets all the attention it seems. We believe this is a result of the constant confusion of the quantitative and the qualitative. People can’t seem to resist ranking things that have different qualities, things that can be compared for their unique geniuses but which are instead forced into some sort of hierarchical arrangement. That’s a lot of philosophy for the promotional copy for a can of tuna, sorry. What we mean to say is that while albacore is whiter, and the texture is, perhaps, finer in places, that doesn’t make yellowfin inferior. It just means you should have a different expectation. Yellowfin isn’t a boring white, and it has more to say in the chew. This is a great tin of tuna from one of Spain’s legendary producers. And the olive oil is organic, too.

    This tin was my first foray into the world of quality tuna, and I thoroughly enjoyed my experience. Initially, I planned to pair the yellowfin with a toasted baguette and homemade tartar sauce. However, after an exploratory bite, I was more than content to finish the tin without any fixings.
    The yellowfin’s heterogeneous texture was my favorite quality, with the cut’s grain ranging from loosely to tightly packed. As the fish flakes apart, the fibers hold a lot of olive oil, making every bite delicious. I didn’t consider any part of the yellowfin dry, and I thought it had a great level of salinity. This all paired wonderfully with the strong umami that’s present in the fish.
    Overall, I look forward to ordering this again. I think it’ll make for an excellent ingredient in a variety of dishes, but it can also stand proudly on its own.
