Cockles are a bivalve mollusk related to clams but are their own distinct creature. You may upgrade any recipe that calls for clams by substituting cockles. They are also excellent straight from the tin with a squeeze of fresh lemon and a few snips of whatever fresh herbs you have on hand. Maybe add a splash of hot sauce, who could stop you? These cockles from Portomar are sized 50/60 per tin, making them the smallest we carry. Sweet and richly delicious.
