Portomar Octopus in Olive Oil

The tinning of octupus turns a sometimes tricky product to cook into perfect every time. Hundreds of uses if you can keep from eating it all straight from the tin. One of our favorites is to use the olive oil to fry some minced garlic and then fry the meats just until they start to show color and serve atop spicy roasted potatoes.

    Had this tonight as part of a pre-dinner snack and I have thoughts. First, I really liked the texture and quality of the octopus. It was mildly chewy in a pleasant way, rather than an overcooked way.

    Since I tried it on its own before making the citrus recipe adapted by daywithmei from the tinned fish cookbook, I would recommend it, but not in that recipe without some changes.

    On reflection, I think that the olive oil is not to my taste. It was thin in texture, and quite mild (but not in a good way). So I would recommend draining it off, and subbing whatever you have that’s better.
