    I’ve recently discovered that mussels in escabeche are absolutely delicious. With sardines being my first tinned fish love, I knew when I saw this tin of Sardinha sardines in escabeche that I had to give them a try. As a added bonus, I love the fun artwork on this, and that other tins from Sardinha.

    I cracked my tin open and found 3 sardines of varying sizes, relatively tightly packed in an orange-hued sauce. The aroma is light and slightly sweet – no strong offensive fish smells. Due to being packed in a bit tight, and to their softer texture, they didn’t want to come out of the tin in one piece, but there was minimal breakage, not armageddon.

    Turns out that sardines in escabeche are absolutely delicious. The flavor is fairly mild, delicate, mildly fishy, with a bit of a sweet and sour note, leaning sweet, from the escabeche. The texture may be a bit on the softer side, but nothing wildly different from plenty of other ‘dines that haven’t been marinating in escabeche. I think these would be good for someone new to sardines who might not love strong fishy flavors, and definitely good for an aficionado looking to expand their ‘dine landscape.

    Cracking open the tin, you see some beautiful sardines in an orange marinade. There was no ‘fishy’ smell to them, just sweet & tangy vinegar. These would be perfect for situations with people who don’t appreciate the smell of a freshly opened tin of fish.

    These sardines were softer than many of the sardines I’ve had in the past. They were not mushy, just softer. They fell apart more easily. I would imagine this was the acid in the vinegar breaking down the fish.

    The flavor was more sweet than I anticipated. The escabeche I’ve had in the past has been more vinegar/aromatic heavy. The flavor was pretty simple, not much going on beyond the pleasant sweet/tangy flavors. I would absolutely eat these again.

    You’ve got my respect, Sardinha. Soft, Matiz-like giant fish in a thin sauce. Slight vinegar that was noticed and appreciated. Smelled a little bit like ketchup (vinegar and paprika hits that note for me) and I do mean that in a good way. I ate them side-by-side with a Ferrigno sardines in escabeche tin. This Sardinha tin had a really nice vinegar tang that met my escabeche expectations … and in comparison, the Ferrigno tin seemed like it didn’t have vinegar in the sauce at all. While the Sardinha escabeche sauce perhaps wasn’t quite as deep and rich in flavor as the Ferrigno escabeche, it provided the tang that ultimately made this the better tin. It’s a 4 star tin and a rebuy for me, a perfect introduction tin for sardines + escabeche.

    I was looking forward to this can. It wasn’t bad, but I was disappointed. I found the can to be rather flavorless. The vinegar sauce looked promising when I cracked the can, but I didn’t really taste much at all. The fish themselves were a bit on the softer side and I got a few unpleasant scales. I ended up breaking out the sriracha since I wasn’t getting anything on their own which was disappointing. I really hoped I was going to like the escabeche sauce. Overall, I give them a 2.5/5. I would either shell out the extra buck or two for a Nuri / Matiz or just grab some King Oscars for a bit less.

    Really enjoyed this tin! I recently got a ton of different Sardinha flavors, and this was by far my favorite. The escabeche complimented the sardines beautifully, and I’ll definitely be coming back for more!
