    Opening this tin presents a pleasant lightly smoky aroma with the cubes of geoduck swimming in a dark caramel colored liquid. At first bite the geoduck is slightly sweet, then smoky, and finishes with a peppery bite at the back of the throat.

    The texture of my first geoduck morsel had a bit of chew to it – slightly firm, though not rubbery. The second bite I tried was slightly softer – still firm, but more yielding than the first bite. The base flavor of the clam comes through slightly, but maybe only after having a few bites. At the same time, the smoke and pepper notes start to accumulate, with each bite feeling like a treat. We ate this tin with a simple assortment of crackers, just as a delivery device and to add a bit of texture. The recipe is already fairly complex that i wouldn’t think about adding any other condiments to it.

    I shared this tin with some folks who enjoy seafood, but generally don’t eat tinned fish and who were a bit squeamish about eating a bit of giant clam. Everyone who sampled it agreed that it was delicious – the recipe including brown sugar, smoke, black pepper, and garlic is a clear winner.

    This is a special tin – an interesting giant clam combined with a stellar recipe. I would have been happy to consume the entire thing myself, though this, as a tinned fish fan, is something I’m happy to share with friends and family as a shared culinary experience.

    If you enjoy seafood but don’t love clams, I think this tin could change your mind. If you’re a foodie and enjoy adventurous recipes, this is definitely a tin to try.
