Zallo Bonito del Norte (White Tuna) in Escabeche

The flesh of the tuna is transformed by the vinegar of escabeche. The first time we tried a tuna in escabeche we were sure we wouldn’t like it. We loved it.

I’ve never had escabeche before so I wasn’t sure what to expect. The tin is a small oval, easy to open, filled to the top with fish and liquid. I tried a bite plain and it was a strong, slightly fishy, vinegar flavor. I put rest of the tuna (leaving the liquid in the tin) over rice noodles. The tuna flaked apart really easily, almost too easily as some of it turned to such small pieces it was a bit hard to eat. Flavor wise, it wasn’t my favorite; it was too much vinegar flavor for my taste. If you know you like this kind of flavor profile, I’m sure you’ll enjoy this!
