    I’ve never had escabeche before so I wasn’t sure what to expect. The tin is a small oval, easy to open, filled to the top with fish and liquid. I tried a bite plain and it was a strong, slightly fishy, vinegar flavor. I put rest of the tuna (leaving the liquid in the tin) over rice noodles. The tuna flaked apart really easily, almost too easily as some of it turned to such small pieces it was a bit hard to eat. Flavor wise, it wasn’t my favorite; it was too much vinegar flavor for my taste. If you know you like this kind of flavor profile, I’m sure you’ll enjoy this!

    I originally added this tin to an order, because Zallo was a brand I’d never seen or heard of before–journey of exploration! But it’s sort of a drab little box, and I’d ordered lots of other things that had more strongly caught my attention, and this tuna ended up under a pile of other fish on me shelves. Intent on some tuna or other for breakfast this morning, I reached down far enough to haul this box to the surface. I’m so happy I did! I’m a vinegar partisan, and this “pickled sauce” offers a very strong vinegary snap. The white wine vinegar is mixed with olive oil, and a bit of garlic, so it’s a sharp vinaigrette, really, which is fully up my alley. I had it with hash brown potatoes and a mix of bell and serrano peppers, just fried up quickly in the skillet using the escabeche in the pan, and it was a happy morning for me. Especially if you are pro-vinegar with your fish, give this tin a try.
