Mariscadora Sardines in Escabeche, 3/4

$5.00

The main reason you rarely see sardines in vinegar based sauces is because it so fully tenderizes the flesh that they have a tendency to fall apart. They’re delicious with the piquant tang built right in, just be extra careful lifting them out of the tin.

Best affordable sardines in escabeche! I’m a HUGE fan of escabeche’d mussels but haven’t really found a great escabeche’d sardine other than the quite pricy Güeyu Mar. Happy to report that this Mariscadora version is faaaantastic. Texturally on the softer side of medium but not mushy. While they do fall apart easily, it’s kind of in a delightful ‘stewed’ sort of way. The most important thing is that they’ve retained enough moisture to avoid the issues that most escabeche sardines have … they really prepared these sardines perfectly. I ate them at room temp, straight from the tin, and it was a delight. Salt levels were excellent and there was a nice tang to the sauce. It’s a brilliant experience here -especially at this price- and completely a no brainer recommendation to everyone reading this.
