Five million stars. I ate this whole tin in a plate of Gildas, with banana peppers and Jeff’s Garden castelvetrano olives, along with a banana pepper martini. These fishies were buttery, complex, and deep-tasting, not just shocking your tongue with salt. They had a really well-rounded umami flavor, and a firm texture that melted into anchovy bliss in my mouth. I know it’s a lot of money for a tin of anchovies, but my god were they ever worth it. I do love anchovies, but even if I didn’t this tin would probably still appeal. In cheaper tins the bones stand out way more, in this tin they just melted away. A++ for Gildas, will be ordering again.

This are a great occasional treat. I consider this to be on the upper tier as far as semipreserved anchovies go — you get the meaty, briny and unctious flavor, yet very minimal fishiness. Very clean, meticulously filleted and no noticeable bones. It’s rich and while not as salty as other anchovies out there, it’s still salty so it’s something that’s great enjoyed on something that will mute down that flavors. I had it with some buttered baguette and on some polenta.
