Basil and thyme both have oil-soluble flavor compounds that work their way into the flesh of the sardines for a lovely change of pace from the usual sardine flavor profile. Great straight from the can, but we love these on top of a salad of mixed greens, and we make a simple vinaigrette by adding lemon juice to the tin liquid. C'est délicieux.
