Extravagant and perfect. Yes, this tin is expensive; it’s straightforwardly an indulgence. It’s also wonderful. The sea bass is marvelously prepared—how can they bring it through the caning process, and its transoceanic journey to my kitchen, and have it arrive as fresh, as tender as this? I’ve absolutely no idea, but they’ve done it. I served it lightly heated on a plate of creamy pasta with toasted hazelnuts and beside sautéed asparagus and lemon. You ought to try this mild, subtle fish at least once in your life.
