Ventresca is a rabbit hole well worth falling down.  The word means “belly” and it is famous for the fattiness. Arguments abound between fans over which they prefer: albacore or yellowfin. Albacore fans love how the fatty makes the soft texture even more luxurious. Yellowfin fans love the contrast between the fatty parts and the firmer parts. There’s no wrong answer, only your own preference.
