Cream, tomato, shallots, coriander, and 59% trout makes this a really lovely jar to keep on hand. Makes a decadent  snack spread onto toast points (the heat from the toast will warm the rillette which will release a lot of the best flavor compounds), but we are currently obsessed with using alllll the rillettes tossed with pasta. Crazy good.

    I’ve never tried trout rillettes before, but I will be having them again, often, and particularly this brand. When I looked at the ingredient list I was surprised at how high on the list carrot was, but its sweet earthiness was the perfect complement to the clean, umami taste of the trout. A wonderful product all around.
