EXCEPTIONAL. The escabeche here is complex, deep, tangy, and right up there with some of the best I’ve had. I can’t wait to put this up against Ramon Pena -my escabeche gold standard- in a blind taste test as I truly think it can hold its own. The mussels themselves were consistently an ideal medium texture that was never chewy nor mushy on any bite. You’ll absolutely want to dip mini-toasts to soak up this escabeche afterwards (or let’s be honest, sip it like a drink). It’s a beautiful, beautiful tin and an instant favorite. If you even *think* you like mussels, you must try this tin.
