Top tier razor clams with the price to match. On the nose, you get savory notes of sweet clams without a hint of fishiness. The olive oil is very mild and a beautiful yellow-green hue. I got 7 clams of varying sizes and they were pleasantly salty and not too chewy. Intensely flavorful, deeply umami, and notes of sweetness that good clams have. Just a touch of grit to some, but that’s almost impossible to avoid with razor clams and it wasn’t enough to detract from the experience.
Hard to choose between this and Gueyu Mar as my favorite razor clams.
