Bonito del Norte and Escabeche is one of those classic combinations that just works together to blend two excellent things into a third that is somehow greater than the sum of its parts. Toss with cooked pasta or top a salad of mixed greens with it. Also great right out of the tin as part of a seacuterie platter.

This is my first high quality tuna can and it was tasty but didn’t quite live up to expectations. I think I’m just not a canned tuna guy. The highlight is the escabeche sauce which adds a bright pop. The tuna itself is mild, firm, and flakes apart easily but came in a single nearly intact piece. The flavor of the tuna itself doesn’t stand out, but the texture is a bit dry as I always find canned tuna to be. The sauce is tasty enough that I enjoyed chunks of fish on crackers.
