Jacques Gonidec Sardines with Organic Basil and Organic Thyme in Organic Extra Virgin Olive Oil


Basil and thyme both have oil-soluble flavor compounds that work their way into the flesh of the sardines for a lovely change of pace from the usual sardine flavor profile. Great straight from the can, but we love these on top of a salad of mixed greens, and we make a simple vinaigrette by adding lemon juice to the tin liquid. C’est délicieux.

    Impressive fish quality. Sardines were an ideal texture -neither too soft nor too firm- and they were moist throughout. When I purchase a tin at a higher price like this one, the noticeable upgrade in sardine quality is exactly the sort of thing that I’m hoping for. I enjoyed the tin overall and it was an above average experience. I do have to admit that the basil/thyme scent & flavor was quite mild and I found myself wishing for more punch. The herbs are visually prevalent here but are more of a background flavor note than a primary one. Nevertheless, I was really satisfied with this tin and it makes me eager to try out other options in the Jacques Gonidec line.

    Opening the tin there are 5 fillets with herbs over the top, they are firm with a nice flavor, moist without falling apart.

    I have to agree with the other reviewer, the herb flavor was very mild and I wish there was a bit more than there was. So while I enjoyed the sardines enough that I will undoubtedly buy another from this brand as a treat, I won’t buy this particular can.
