Ingredients: Sardines 75% (Sardina pilchardus), extra virgin olive oil 18%, lemon 6%, salt.

Excellent, quintessential paragon of sardines in lemon. The acid of the lemon was not too forward, and played nicely with the slight bitterness of the oil. The fish themselves were cooked to perfection, tender and yielding. Overall, the whole can was mildly flavored and much more subtle and complex than other sardines on lemon I have had, as befitting a tin of French provenance. The oil is extremely high quality; do not waste it.
