Side by Sides: EVOO or Peanut Oil?

Did you know that using EVOO is a relatively recent thing? Scuttlebutt says that it only came about because Whole Foods demanded it, and the folks at BELA were happy to accommodate. But for most of the history of canned sardines neutral oils (sunflower, peanut, and regular olive oil) were preferred, so as to not interfere with a proper appreciation of the flavor of the fish. And along the Brittany coast, peanut oil was always and remains the favorite.
