Acipenser baerii sturgeon loins , from young specimens, just over a year old, raised entirely in Spain, with the highest quality standards and under the premise of sustainability. More tender and tastier than the one usually used for consumption, with white and consistent meat, ready to be incorporated into other dishes, or to take directly. Its meat has a unique, soft and fine texture, with an exquisite and surprising flavor, with a low energy contribution. Extraordinarily honeyed and smooth, with a deep flavor.

It is an excellent source of protein, phosphorus and Omega 3 fatty acids. Appreciated in haute cuisine for its versatility, its meat finely marbled with fat is juicy and has heart-healthy properties.

    Wonderful! Fresh sturgeon is one of my favorite fish and I wasn’t sure what to expect from the tinned version. This did not disappoint. It was very tender and rich. I served it gently warmed along with freshly picked beans from the garden and cornichons to cut the richness. I used some of the olive oil on the beans and saved the rest for later. All in all, a special treat.

    Flaky and moist with the meat looking like a braid of hair. Holds together like salmon with a subtle fish flavor. A pleasant, mellow tasting fish that would go well in whatever recipe you would use fish for. Lends a nice meaty texture to cooked vegetables such as leeks.

    My first experience of sturgeon. I had a preconceived notion, based on the ancient, imposing form of the living creature, that the tin would present a strong character. Instead it’s the most subtle fish I’ve yet encountered. Tender flesh, subtle flavor—I’m glad I paired it with angel hair pasta sauced only with preserved garlic and a bit of oil from the can. A quiet rare treat.
