Bernardo Ortiz de Zárate founded Conservas Ortiz, located in Ondarroa in the Basque region of Spain, in the early 1980s. For generations the family has led the industry in the artisan production of tinned fish of from the Cantabrian Sea.

They source from local fishermen who still use live bait to catch the Bonito del Norte (Albacore), and still use nets for anchovies, methods that ensure the fish aren’t damaged during the catch and that their numbers remain strong enough to ensure harvests well into the future.
